  • Refreshing Cucumber Salad Recipe -- In Heart and Star Shapes?

    I got this recipe from my mom who got it from a Canadian Diabetic Association cookbook. I munched on it all day while I was in Vancouver. This cucumber salad + watermelon was absolute heaven during that heat wave and no air conditioning!! Very low-cal, easy to make, and refreshing for summer!

    Ingredients:
    Cucumber, sliced (1 whole)
    Sugar (1.5 tsp)
    Salt (0.5 tsp)
    White vinegar (1 Tbsp)
    Crushed red pepper (0.5 tsp)
    Garlic, minced (1 tsp)
    Green onion, sliced (1 Tbsp)
    Roasted sesame seed (1 Tbsp) -- optional

    Directions:
    1. Mix sugar, salt, crushed red pepper, garlic, vinegar, and green onion.
    2. Add sliced cucumber, mix.  Refrigerate for 20 min. Mix again with fork or chopstick.
    3. Add sesame seed when served
     
    I am in love with this recipe. On a side note, I was browsing around sites on the internet when I came across these heart and star shaped cucumbers grown in Japan!

    Leave it to those Japanese people to make quirky cucumbers, iPod fuji apples, and square watermelons!

    Plastic molds were affixed onto the stem of the plant to force the cucumber to take form of the mold. Apparently these cucumbers are going for 300 yen each (about $2.50). They kinda look cute! Something girls would go for more I think.
