Veg It Up With Salads!
When people think of veggies, they think of salads first! But most people do not think of salads as a satisfying meal. I love to make salads as a SNACK. When I come home, I don't have to cook anything. I literally just throw together a bunch of items in a bowl. The two essentials that you need in your fridge are salad dressing and some leafy greens!For salad dressings:
- Choose lower-fat salad dressings like vinaigrettes
- Use your measuring spoons! Try to limit salad dressing to 1-3 tablespoons. Those calories can add up!
On greens:
- The best choice is spinach. Dark green leafy vegetables contain the most nutrients!
- Most greens come in plastic containers or bags. I find that if I wipe away the moisture that builds up inside the plastic container, the veggies stay fresher longer!
On top, I add anything I have lying around! It can be nuts, apples, oranges, berries, avocadoes, pomegranates, tomatoes, etc. These are two salads that I made for my university's restaurant management course. The head chef thought the strawberries were too summery for our entree menu, so our group switched it up to apples.
Salads are seriously super easy to make. I'm definitely not an amazing cook, but I can throw a salad together!You may have already seen the new Carl's Jr commercial by Kim Kardashian that promotes salads. I never really cared much for Kim Kardashian, but it's nice to see that she is using her sexy image to promote something healthy! I'll support this type of marketing! But I don't buy her endorsement on weight loss pills. I believe healthy lifestyles should come naturally from healthy whole foods and keeping physically active!
Just remember to watch out for salad dressings! They can be secret high fat/calorie/salt bombs!
Always ask for dressing on the side at restaurants. Look up calorie info on packaging or online.I will be updating with more posts on tips to veg it up!

@Roadlesstaken - thx hun! I am applying to hospital internships and grad schools this week. I put my Xanga site on my cover letter and resumes! O_O Either it will make me look super silly or super innovative. I hope the latter lol. Any tips for my applications, mr. grad student?
@xsimply_special - Thx dear! I'm trying to update more now since school is not so busy yet ;)

ooh, what's the recipe for the salad? :D
salad without any dressings!
@juliebeanss - There aren't really exact recipes! But I'll give you the ingredients!
The first salad has: spinach, walnuts, strawberries, boiled baby shrimp and avocadoes
The 2nd salad is very similar with: spinach, apples, boiled baby shrimp, avocadoes, and chick peas!
Plus your choice of dressing!
Salads are fun coz you can put whatever YOU like in them
@y_tc - I sometimes do that! But eventually I just feel like I need a bit more flavor!
I love Fuji Apple salads from Panera Bread. Though, I should have eaten that (or any salad) instead of BK. Haha I slipped today, but I will be more careful and vigilant from now on.
I love salads! I like topping mine with tangerines, blueberries, walnuts, dried fruit (i.e. golden raisins, cranberries, dried cherries), w/ a little bit of vinagrette. Super good! =D
I ate salads all the time after moving out... Until August when I found a dragon fly in the salad I made from spinach here at my apartment. After seeing all the pretty pictures though, I'm starting to crave salad once again
@bryangoodrich - yum :P
@StacyAWhite - Oh gosh! I think everyone has had a nasty bug experience when it comes to food! I have found bugs inside a peach once. and more inside a mangosteen! I was so turned-off for a long time! But now i eat these two fruits... I just cut them up now and scan carefully before putting it into my mouth =P I'm definitely going to be washing and checking my spinach more carefully from now on!
@curiousbones - I just love how there is such a variety of ingredients that can be used!
@millionofstars - Everything in moderation ;)
@i_Nutrition - yep! :D
