  • Veg It Up With Salads!

    balsamic vinaigrette When people think of veggies, they think of salads first! But most people do not think of salads as a satisfying meal. I love to make salads as a SNACK. When I come home, I don't have to cook anything. I literally just throw together a bunch of items in a bowl. The two essentials that you need in your fridge are salad dressing and some leafy greens!

    For salad dressings:

    • Choose lower-fat salad dressings like vinaigrettes
    • Use your measuring spoons! Try to limit salad dressing to 1-3 tablespoons. Those calories can add up!

    On greens:

    • The best choice is spinach. Dark green leafy vegetables contain the most nutrients!
    • Most greens come in plastic containers or bags. I find that if I wipe away the moisture that builds up inside the plastic container, the veggies stay fresher longer!

    On top, I add anything I have lying around! It can be nuts, apples, oranges, berries, avocadoes, pomegranates, tomatoes, etc. These are two salads that I made for my university's restaurant management course. The head chef thought the strawberries were too summery for our entree menu, so our group switched it up to apples.


    Salads are seriously super easy to make. I'm definitely not an amazing cook, but I can throw a salad together!

    You may have already seen the new Carl's Jr commercial by Kim Kardashian that promotes salads. I never really cared much for Kim Kardashian, but it's nice to see that she is using her sexy image to promote something healthy! I'll support this type of marketing! But I don't buy her endorsement on weight loss pills. I believe healthy lifestyles should come naturally from healthy whole foods and keeping physically active!


    Just remember to watch out for salad dressings! They can be secret high fat/calorie/salt bombs!
    Always ask for dressing on the side at restaurants. Look up calorie info on packaging or online.
